Beef in Spicy Mint Oyster Sauce

  • 2 tablespoons dry Sherry
  • 3 tablespoons oyster sauce
  • 4 cloves garlic, minced
  • 1 tablespoon vinegar
  • 1 ½ teaspoons sugar
  • 1 pound lean beef, cut into thin strips
  • 1 tablespoon cornstarch
  • 3 tablespoons oil
  • 1 carrot, cut diagonally into thin ovals
  • 1 onion, cut into 2 inch strips
  • 1 stalk celery, cut into thin 2 inch strips
  • ½ cup thinly sliced mushrooms
  • 1 /2 cup baby corn, halved lengthwise
  • 1 cup Chinese pea pods
  • 2 Serrano chilies cut crosswise into thin slices
  • 12 mint leaves


  1. Combine Sherry, 1 tablespoon oyster sauce, one minced garlic clove, vinegar and one teaspoon sugar.
  2. Combine beef strips with mixture and marinate for ten minutes.  Drain and coat with the cornstarch.
  3. Heat one tablespoon oil in a wok or large skillet.  Brown half remaining minced garlic.  Add carrot and onion and fry over high for one minute.  Add celery, mushrooms and baby corn.  Fry for 30 seconds, add pea pods and fry 20 seconds.  Season with one tablespoon oyster sauce and ½ teaspoon sugar.  Remove.
  4. Heat remaining two tablespoons oil.  Brown remaining minced garlic.  Add beef and chilies.  Stir fry one minute of until beef is half cooked.
  5. Return cooked vegetables to skillet and add mint leaves.  Cook and stir 30 seconds over high.
  6. Season to taste with remaining oyster sauce and sugar.
