Ingredients:
- 2 medium ripe tomatoes
- ½ med white onion, quartered
- 1 red bell pepper
- 4 scallions
- oil
- 2 garlic cloves
- 2 teaspoons minced chipotle chiles in adobo
- 1 teaspoon lime juice
- 1 teaspoon Kosher salt
- 1 teaspoon chili powder
- ½ teaspoon ground black pepper
- 4 boneless chicken thighs
- Fresh lime juice
- 8 small flour tortillas
- ½ cup crumbled goat cheese
- Sliced avocado and chopped cilantro
Instructions:
- Prep grill for direct cooking over high heat. Brush tomatoes, onion pieces, pepper and scallions with oil. Grill veggies over high heat with lid closed until charred all over and tender.
- Place onion, tomatoes, garlic, chipotle chiles and lime juice in food processor and whirl until smooth. Season with salt and set aside.
- Combine dry spice, lightly oil thighs and rub dry ingredients over. Grill.
- While thighs are grilling, peel and de-seed pepper, chop along with scallions and add to salsa made above.
