Pasta Dough-White

Ingredients

  • 1 ½ cups all purpose flour
  • 1 ½ cups  semolina flour
  • 4 eggs
  • 1 tablespoon oil

Instructions

  1. Measure the flours into the food processor and process 30 seconds to combine.
  2. In another bowl, lightly beat together the eggs and the oil. Pour this mixture through the feed tube of the processor gradually with the machine running. Add enough of the liquid until the mixture beads and will hold together if pressed with your fingers.
  3. I like to make sure the dough barely comes together and let it knead for about 30 seconds.
  4. Remove the dough from the bowl and make into an oval that you wrap in Saran and let rest for 40 minutes. This is an important step.
  5. Cut the oval into quarters or smaller and cover the remaining  while you roll out the first one.
