Spicy Beef with Asparagus and Mushrooms

Ingredients

  • 8 ounces New York thinly sliced
  • 2 tablespoons each: orange juice, soy sauce
  • 1 tablespoon each: olive oil, chili paste
  • 3 green onions sliced
  • 3 cloves garlic minced
  • 1 piece ginger root one inch long minced
  • 1 bunch asparagus cut on diagonal into 1 ½ inch pieces
  • 1 package or eight ounces slice mushrooms
  • Steamed rice

Instructions

  1. Marinate sliced steak with orange juice and soy.
  2. Heat oil in skillet and add chili paste, green onions, garlic and ginger. Stir fry until aromatic about 1 minute. Add beef and marinade and fry until nearly cook through about 3 minutes. Remove beef to a plate.
  3. Add more oil if necessary and add asparagus. Fry until the color brightens and the spears are still slightly crunchy about four minutes. Remove to a plate and add mushrooms to pan and fry until browned.
  4. Reduce heat to low and return all ingredients to the pan. Simmer one minutes to meld flavors.

Notes

  1. Substitute green beans, bell peppers or onions for the asparagus. You can also substitute pork loin or chicken for the beef. Round out the meal with spring rolls or scallion pancakes.
