Ingredients

  • 2 pounds green beans cleaned
  • ¾ pound boneless skinless chicken thighs BBQ and diced
  • 2 tablespoons sesame oil
  • 1 ½ tablespoons sugar
  • 2 tablespoons soy
  • 1 tablespoon chopped hot chile
  • ¼ cup lime juice (about 2 limes)
  • ¼ cup rice wine vinegar
  • 2 tablespoons chopped basil
  • 2 tablespoons cilantro
  • 2 tablespoons chopped mint
  • 1 sweet red pepper, diced
  • 1 pasilla pepper diced
  • Salt and pepper to taste
  • ½ cup coarsely chopped roasted peanuts

Instructions

  1. Cook green beans until JUST TENDER and blanch in ice water. Cool completely and chill.
  2. Combine chicken, sesame oil, sugar, soy, chile and lime juice and let stand for one hour.
  3. Add chicken mixture with green beans and toss well. Add vinegar, basil, cilantro, mint and peppers and toss. Season with salt and pepper to taste. Garnish with chopped peanuts.

Notes

  1. You can also use pork loin in this recipe.
