Ingredients

  • 1 bunch of baby spinach, washed
  • 2 small apples, cored and chopped
  • 1 teaspoon lemon juice
  • 1 cup chopped toasted walnuts
  • 2 tablespoons vegetable oil
  • 4 chicken breast halves cut into 1 inch cubes
  • 1 cup whipping cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper

Instructions

  1. Toss apples with lemon juice and add to the spinach and walnuts in large bowl. Set aside.
  2. In a large skillet, heat oil over medium and add chicken to sauté until lightly browned all over and just cooked through. Using slotted spoon, remove chicken from pan and place on top of the salad.
  3. Add cream and mustard to drippings in the skillet and cook over medium, stirring until thick. Season to taste.
  4. Pour sauce over salad and serve IMMEDIATELY.
