Ingredients

  • ½ cup raisins
  • ½ cup dark rum
  • 1 ½ pints best quality vanilla ice cream
  • 1 cup heavy cream
  • ½ cup crumbled amaretti cookies

Instructions

  1. Mince the raisins and soak them in the rum for at least one hour.
  2. Transfer the ice cream to a large bowl and let it stand at room temperature until soft but not melted.
  3. Whip the cream in a metal bowl until it holds soft peaks. Fold raisin-rum mixture and cookie crumbs into the whipped cream.
  4. Gradually fold this mixture into the ice cream.
  5. Portion into large wine glasses and place in the freezer to firm up, at least one hour.
