Thai Curry with Sweet Potatoes and Spinach

Ingredients

  • 1 tablespoon oil
  • 1 yellow onion, diced
  • 1 cup chicken stock
  • 2 cans low fat coconut milk
  • 4 tablespoons fish sauce
  • 6 tablespoons green curry paste
  • 4 sweet potatoes, peeled, cut into ½ inch cubes
  • 16 ounces boneless pork, chicken etc cut into ½ inch cubes
  • 4-6 ounces baby spinach.

Instructions

  1. Heat oil, add onion and saute until tender.
  2. Add stock, coconut milk and fish sauce and bring to a simmer.
  3. Add curry paste and stir until dissolved.
  4. Add sweet potato and simmer 10 minutes until almost tender.
  5. Add meat and simmer covered until cooked.
  6. Add spinach and toss.  Serve with rice.

Notes

  1. A main dish in less then 30 minutes.  I like to add whatever additional veggies I have, frozen peas, sliced celery in addition to the sweet potatoes and spinach.  Also, try different protein sources, chicken, tofu, shrimp.
