Turkish Fig Ice Cream

| Servings: 1 quart


  • 6 ounces fried figs
  • 1 cup water
  • ½ cup sugar
  • 2 cups whole milk
  • ¾ cup cream
  • 1 tablespoon dark rum


  1. Cut figs into quarters and combine with water in a saucepan. Bring to a boil, reduce heat to a simmer and cover. Simmer until the figs have softened, about 30 minutes.
  2. With a slotted spoon, remove the figs and place in a blender or processor. Add the sugar to remaining water and stir until dissolved.
  3. Add the sugar-water and milk to the figs. Puree and stir in cream and rum. Chill thoroughly. Process in ice cream machine.
