- 6 ounces fried figs
- 1 cup water
- ½ cup sugar
- 2 cups whole milk
- ¾ cup cream
- 1 tablespoon dark rum
- Cut figs into quarters and combine with water in a saucepan. Bring to a boil, reduce heat to a simmer and cover. Simmer until the figs have softened, about 30 minutes.
- With a slotted spoon, remove the figs and place in a blender or processor. Add the sugar to remaining water and stir until dissolved.
- Add the sugar-water and milk to the figs. Puree and stir in cream and rum. Chill thoroughly. Process in ice cream machine.
