Pepperoni Bar Pizza with Hot Honey

Ingredients

  • 1 ball pizza dough
  • 1-2 Tablespoons Essential Pomodoro Sauce (page 25 of the book TRULY MADLY PIZZA) or your favorite spicy tomato sauce
  • 3-4 ounces skim mozzarella grated or 3-4 ounces of provolone grated or a combo of the two
  • 2 ounces thinly sliced Calabrian sausage or pepperoni
  • 5 medium sized peppadew peppers or the small jarred piquant red peppers, quartered and well blotted
  • Thinly sliced red onions(so thin you can see through them), maybe one ounce
  • Hot honey to taste, heated to make the drizzling easier

Instructions

  1.  Form pizza as called for by your recipe and heat source.  Place on pizza paddle which has been sprinkled with flour or semolina.
  2. Spread Essential Pomodoro (or your choice of red sauce)on pizza using a large tablespoon.  You do not want too much sauce or the pizza will tend to be soggy.
  3. Now spread the Mozzarella and/or provolone on the pie.
  4. Top with the thinly sliced sausage/pepperoni and the peppers.  Dry the thinly sliced red onions and spread lightly on top of the pepperoni and peppers.
  5. Once the pizza is out of the oven, heat the hot honey in the microwave for about 20 -30 seconds to liquify.  Take a fork, mix up the honey and drizzle over the pizza to taste.
