Szechwan Noodles

Ingredients

  • 2 large garlic cloves
  • 2 tablespoons cilantro
  • 1/3 cup peanut butter
  • ½ cup coconut milk
  • 1 teaspoon sugar
  • ½ teaspoon curry powder
  • ¼ to ½ teaspoon chili paste
  • One package Chinese noodles
  • ½ cup chopped peanuts
  • 2 green onions, slivered

Instructions

  1. In a food processor, mince garlic and cilantro. Add peanut butter, sugar, curry powder and chili paste. Process until combined
  2. Add coconut milk. Process until smooth.
  3. Too with warm Chinese noodles, green onions and peanuts.

Notes

  1. Great as a light lunch. The sauce keeps only 2 to 3 days in the fridge and is easily adapted into a peanut sate sauce.
