Basil Rouille

| Servings: 1 1/2 cups


  • 1 cup fresh minced basil
  • 1 small tomato, seeded and chopped
  • 1/3 cup fine dry bread crumbs
  • 4 large cloves of garlic, minced
  • 1 small Serrano chile, seeded and diced
  • 1 teaspoon salt
  • ½ cup olive oil


  1. Combine basil, tomato, crumbs, garlic, chile pepper and salt and mix well.
  2. Gradually stir in the oil and mix well.  Cover and chill.
  3. To serve, bring to room temperature and stir before serving.

Comment: Rouille is a Provencal condiment that is stirred into stews and soups.  Great as a spread too!
