Broccoli “Lasagna”

Ingredients:

  • 1 large bunch broccoli
  • ¼ teaspoon salt
  • 1 16 ounce container cottage cheese
  • 2 egg whites
  • 1/3 cup Parmesan
  • 3 tablespoons flour
  • ½ teaspoon Italian herb seasoning
  • ½ of a 15 ounce jar of spaghetti sauce
  • 4 ounces mozzarella, shredded

Instructions:

  1. Slice broccoli lengthwise into ¼ inch slices.  In a skillet over medium heat, heat two cups water and salt to boiling, add broccoli and bring back to boiling.  Reduce heat to low, cover and simmer 5 minutes and drain.
  2. Preheat oven to 375°.  In a food processor, blend cottage cheese, eggs whites, Parmesan, flour and Italian herb seasoning until smooth.
  3. Oil a 12 by 8 baking dish.  Arrange half of the broccoli in a single layer, top with cottage cheese mixture, then layer with remaining broccoli.  Spoon spaghetti sauce over broccoli and finish with mozzarella.
  4. Bake, uncovered, 35 minutes or until hot and bubbly in the center.  Let stand 5 minutes for easier serving.
