Chocolate Pots de Creme

Ingredients:

  • 1 cup whipping cream
  • 1 cup whole milk
  • 3 ounces bittersweet (not unsweetened) chopped
  • 4 large egg yolks
  • 1/4 cup sugar
  • ½ teaspoon vanilla
  • Salt to taste

Instructions:

  1. Preheat oven to 300°F. Melt the chocolate with ½ of the cream in a double boiler.  In another pan bring the milk and the rest of the cream to a boil then stir into the chocolate.
  2. Sir in sugar and vanilla and late to taste.
  3. Place the yolks in another bowl.  Slowly add the hot chocolate mixture to the yolks in a thin stream while stirring constantly.
  4. Pour mixture back into the double boiler and bring to a boil.  Reduce to medium flame and cook for three minutes longer while stirring.
  5. Pour through a fine strainer into four heat proof cups.  Place a deep tray into the oven.  Place cups on tray and fill tray halfway with boiling water.  Over the tray with foil and bake for 20 minutes until set.
  6. Chill completely.
