Chocolate Pudding a’la Shannon Hughes

Ingredients:

  • 1 Tbsp. Vanilla Extract
  • 1 quart Half and Half
  • 1 quart Whole Milk
  • 1 ½ cup Sugar
  • 1 cup High Quality Cocoa
  • 2 – 3 heaping Tbsp. Corn Starch
  • 1 Bar Scharffen Berger Pure Dark Chocolate (9.7 oz)
  • 1 pint Whipping Cream

Instructions:

  1. Scald the milk and half and half.
  2. Melt chocolate in double broiler.
  3. Mix scalded liquid with dry ingredients.
  4. Add melted chocolate to warm mixture.  Add vanilla.
  5. Return to low heat and stir until very gloppy.
  6. Transfer to goblets and cover with tea towel and place in cool area.
  7. Just prior to serving add whipped cream.

Comments: Excellent desert, can be made ahead
