Ingredients:
- 3 tablespoons soy
- 3 tablespoons oyster sauce
- 1 teaspoon sugar
- ½ pound top sirloin steak cut into thin strips
- 3 tablespoons oil
- ½ cup Chinese broccoli leaves and stems thinly sliced on the diagonal
- 1 cup unsalted chicken stock
- 1 tablespoons dark soy
- 1 pound fresh thick egg noodles
- ½ teaspoon sesame oil
Instructions:
- Combine 1 tablespoon light soy, 1 tablespoon oyster sauce and sugar in a bowl. Add beef and marinate for 20 minutes.
- Heat the oil in a skillet over high. Add beef and stir fry until it begins to brown. Add broccoli and fry until tender, about 3 minutes. Transfer to a plate and set aside.
- Bring stock, remaining 2 tablespoons light soy, remaining 2 tablespoons oyster sauce and dark soy to a boil over high heat. Add noodles, stir, and cook until most of the liquid has been absorbed, five to ten minutes. Stir in sesame oil, beef and broccoli.
Comments: Lo Mian, literally tossed noodles is the generic term for any combination of fresh egg noodles and stir-fried vegetables and or meat.
