Fried Rice

  • 3 tablespoons canola oil
  • 3 eggs, beaten
  • 1 bunch scallions, roughly chopped
  • 1 cup leftover pork, chicken or beef, diced
  • 1 cup frozen peas and or corn, thawed (plus any leftover veggies)
  • 4 cup cold cooked white or brown rice
  • 4 tablespoons soy
  • 2 tablespoons sesame oil
  • ½ teaspoon chili paste
  • Salt and pepper to taste
  • 2-3 cloves garlic minced


  1. In a large skillet heat 1 tablespoon of the oil over medium.
  2. Add the eggs and scallions; cook until ALMOST set and set aside.
  3. Add the remainder of the oil, meat and veggies and oil.  Increase heat slightly and add rice and cook until the rice is crispy.
  4. In a small bowl combine the soy, water, sesame oil, chili paste and garlic.  Add toe the rice and cook until absorbed.

Comments: The secret to good fried rice is starting with cold cooked grains!!!
