Pasta with Chicken, Leeks, Mushroom and Truffle Butter

Ingredients

  • 6 boneless, skinless chicken thighs, cut into 1 inch cubes
  • 2 tablespoons olive oil
  • Salt and Pepper
  • 2 leeks, cleaned and sliced ¼ inch
  • 1 pound cremini mushrooms, cleaned and cut into fourths
  • ½ cup dry white wine
  • ½ cup cream
  • 4 tablespoons truffle butter
  • Faro or Angle Hair Pasta

Instructions

  1. Dry chicken cubes.  Heat a large skillet, add 1 tablespoon oil, add chicken and season with salt and pepper.  Saute until lightly browned on all sides.  Remove and set aside.
  2. Add remaining oil and sliced leeks.  Saute for about 3 minutes making sure to stir and not brown.  Add dry white wine and reduce till only about 1 tablespoon of liquid is left.
  3. Add chopped mushrooms and brown.  Add truffle butter, stir to melt and add cream.  Add reserved chicken and heat but do NOT BOIL.
  4. Serve over pasta or faro!

Comments: Oh so yummy.  A little of the truffle butter goes a long way.  This is especially available around the holidays.  2010 Costco had a great value on it.
