Brandied Toffee Lace Cookies

Ingredients:

  • 1 cup butter or margarine
  • 2 cups rolled oats
  • 1 cup packed brown sugar
  • 2/3 cup all-purpose flour
  • 4 tablespoons cream
  • 6 tablespoons cream
  • 1 cup semisweet chocolate chips
  • 2 tablespoons brandy

Instructions:

  1. Melt the butter, remove from the heat and stir in the oats, brown sugar, flour and 4 tablespoons of the cream.  This is the cookie dough.  Stir often as using and keep it well mixed.
  2. Drop the dough in ONE teaspoon portions, placing only six per 12X15 baking sheet lined with parchment.
  3. Bake at 350° for 7-9 minutes.  Remove from the oven and let stand until cookies are firm, about 3 minutes.  Place on racks to cool.
  4. For filling stir remaining cream, chips and brandy over low heat until melted.  This should be a bit thickened to be easy to work with.  Now you can either place the chocolate on the bottom of one and sandwich them together…………or place the chocolate in a plastic zip lock and drizzle over the tops of all the cookies.
