Chickpea, Feta and Olive Salad

Ingredients:

SALAD

  • 2 cans (19 ounces each) chickpeas, drained and patted dry
  • 1 large tomato, cubed
  • 1 cup feta cheese, cubed
  • ½ cup pitted kalamata, olives, chopped
  • ¼ cup minced parsley
  • 3 cups mixed salad greens

DRESSING

  • 1 clove garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon each cumin and paprika
  • ¼ teaspoon each ground red pepper and salt
  • Freshly ground pepper to taste
