Chocolate Meringue Kisses

Ingredients:

  • 10 egg whites
  • ½ teaspoon salt
  • 5 cups sugar
  • 5 cups chocolate chips
  • 2 tablespoons vanilla

Instructions:

  1. Preheat oven to 250 degrees.
  2. Line a baking sheet with parchment.
  3. Beat egg whites until frothy.  Add the salt and beat on medium until they begin to stiffen.  Increase the mixer speed to high and beat until the whites hold firm peaks.
  4. Reduce miser to medium and slowly add the sugar, a couple tablespoons at a time.  When all the sugar has been added, increase mixer speed and beat until the ingredients are incorporated and the sugar crystals have dissolved.
  5. Using a large spatula fold in half of the chips and vanilla.  Repeat and add the remaining of both.
  6. Using a large ice cream scoop, portion into well rounded mounds on the baking sheet.  Bake for about 30 minutes or until just lightly colored.

Comments: Though simple to make, these cookies are incredibly satisfying.  The light meringue provides contrast for the large amount of chocolate.
