Fiesta Banana Cake

Ingredients:

  • 2 ripe large bananas
  • 1 cup brown sugar
  • ½ cup butter or margarine
  • 2 eggs
  • ¾ cup sour cream
  • ½ cup light molasses
  • 1 teaspoon vanilla
  • 2 ¼ cup flour
  • 2 teaspoons chopped crystallized ginger
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup chopped pecans.

Instructions:

  1. Preheat oven to 350 degrees and grease a 9 cup fluted tube pan or 2 (8 ½ by 4 ½ inch) loaf pans.
  2. Puree one banana in the blender.
  3. Cream ½ cup brown sugar and butter together.  Beat in pureed banana, eggs, sour cream molasses and vanilla.
  4. Combine flour, ginger, baking soda, baking powder, salt and cinnamon.  Beat into banana mixture.
  5. Sprinkle ½ cup pecans in bottom of the pan.  Spread half of the batter and sprinkle with remaining ½ cup brown sugar and ½ cup pecans.
  6. Slice remaining banana over top and spread remaining batter over filling.
  7. Bake at 350 degrees for 40 to 50 minutes.  Cool slightly before inverting onto a wire rack.
