Oat Wheat Bread

Ingredients

  • 4 to 5 cups bread flour
  • 2 teaspoons salt
  • 2 packages dry yeast
  • 1 cup water
  • ½ cup honey
  • ¼ cup butter
  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup whole wheat flour
  • ½ cup oats
  • 1 cup chopped walnuts

Instructions

  1. Generously grease 2 9 by 5 loaf pans and set aside.
  2. In a large bowl of an electric mixer, combine 2 cups bread flour, salt and yeast. Blend well.
  3. In a medium saucepan heat water, honey, butter and cottage cheese until very warm, about 120 degrees, so that you can still put your fingers in it. Add this warm liquid and eggs to the four mixture. Blend at low speed until moistened and beat three minutes at medium.
  4. By hand, stir in whole wheat flour, oats, nuts and enough additional bread flour to form a soft dough. Turn out on floured surface and knead about 10 minutes or until smooth and elastic.
  5. Place in a greased bowl and cover loosely with plastic wrap. Let rise in a warm place until doubled in size, 1 to 2 hours.
  6. Preheat oven to 375 degrees before you punch down the dough.
  7. Punch down the dough and divide into 2 equal parts. Let the parts rest for 10 minutes covered before continuing to shape. Shape into loaves and place in greased pans. Cover with a floured towel and let rise until doubled.
  8. Bake at 375° 35 to 45 minutes until loaves sound hollow when lightly tapped. Remove from pans immediately and cool on wire racks.
