Oatmeal Cake or Cupcakes

Ingredients

  • 1 ¼ cup water
  • 1 cup quick cooking oats
  • ½ cup butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 ½ cup flour
  • 1 teaspoons baking soda
  • ½ teaspoon salt
  • ¾ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Topping

  • ¼ cup butter
  • ½ cup brown sugar
  • 3 tablespoons cream
  • 1/3 cup chopped nuts
  • ¾ cup coconut

Instructions

  1. Preheat oven to 350 and grease a 9 by 13 pan or 15 muffin cups.
  2. Bring water to a boil and pour over oats. Stir and cover and set aside for 20 minutes to cool.
  3. Mix butter and sugars until creamy. Add vanilla and eggs. Then add oatmeal and blend well.
  4. Sift flour, soda, salt and spices. Add to creamed mixture. Scoop into prepared pans and bake the cake for 35 to 40 minutes while the cup cakes should take about 15 to 18 minutes.
  5. FOR THE TOPPING melt the butter, add brown sugar, cream, nuts and coconut. Mix well. Spread topping in an even layer over cake or cup cakes and broil until the topping bubbles.
