Spanish-Style Grilled Veggies with Breadcrumb Picada (Easy Grilled Veggies)

Picada is a Spanish flavoring made with garlic, herbs, and ground nuts. Here, breadcrumbs stand in for the nuts.

Ingredients

On the Grill

  • 3 large red bell peppers, stemmed, seeded, quartered
  • 4 large Oriental eggplants, trimmed, cut lengthwise into 3 slices
  • 4 green or yellow zucchini, trimmed, cut lengthwise
  • Olive Oil

For the Dish

  • 6 T olive oil, divided
  • 2 cloves of garlic
  • ½ teaspoon crushed red pepper
  • ½ cup panko
  • ¼ cup chopped fresh Italian parsley
  • 2 t. chopped fresh oregano

Instructions

  1. Prepare gill to medium heat.  Brush veggies with  oil, sprinkle with salt and pepper.  Grill as normal and transfer to a platter.
  2. Heat 3 tablespoons oil in skillet over medium.  Add garlic and crushed red pepper, stir about 30 seconds.  Add breadcrumbs, stir until golden.  Watch so it does not burn!  Season with salt and pepper and scrape into a bowl or it will continue to cook.
  3. Drizzle your best olive oil over the veggies on the platter and sprinkle with bread crumbs and chopped herbs.
